Philippe Pacalet Pommard 2022 is a dry red wine of exquisite craftsmanship, made exclusively with Pinot Noir grapes. Produced by Philippe Pacalet in the prestigious AOC Pommard appellation in Côte-d’Or, Burgundy, France, this wine comes from a renowned winegrower known for his sophisticated Pinot Noir and Chardonnay wines. With a diverse portfolio ranging from village wines to Grand Crus, such as Corton-Charlemagne and Charmes-Chambertin, Pacalet has established a distinguished reputation on the global wine scene.
Starting his career in 1999, Philippe Pacalet does not own his own vineyards, but instead chooses to lease meticulously selected plots with exceptional soils. In 2007, he acquired a historic XNUMXth century winery in Beaune, in the heart of Burgundy.
The soils of the production plots of this wine are clay-calcareous with a surface layer of pebbles and clay on limestone rock. The vineyards are situated on south-facing slopes, benefiting from a warm and sunny microclimate, with notable plots such as “Vauxmuriens”, “La Vache” and “Rugiens”. The average age of the vineyards is 50 years with a density of 10.000 plants per hectare and a yield of 35 hl/ha, cultivated in a sustainable and eco-friendly way.
The grapes are harvested whole and sorted without using CO2, macerating twice a day for three weeks. Alcoholic fermentation is carried out with indigenous yeasts and without artificial temperature control, followed by malolactic fermentation in pieces. The wine matures on lees in a “reduction” process without racking and with removal of free CO2 for 16 months, culminating in two months of aging in barrels.
