All the plots of the Domaine are harvested by hand. The vinifications in red are little interventionist with macerations of about 20 days. Cold prefermentation and high temperature fermentation. Aging in Burgundy oak barrels for 13 months with 30% renewal in new wood.
“Les Epenottes” by Jean-Marc Boillot offers us a particularly powerful Pinot intensity. The first nose evokes notes of black fruits, liquorice and mocha. The palate has a certain suppleness and a particularly crunchy delicacy. Very fine tannins and fruity finish to perfection!
