Bellavista Saten is a blanc de blanc wine, this means that is only produced with white grapes of Chardonnay variety. Saten is a term that means smoothness” and can be produced in Franciacorta only. A Saten is nothing more than a champenois sparkling wine with a slightly lower pressure in the bottle, which is at about 5 atmospheres unlike 6 atmospheres of Brut, Extra Brut and Pas dose sparkling wines. Bellavista was the first winery to produce and to believe in Saten in 1984 and since then Saten is produced in the best vintages only. Chardonnay grapes selected for the production of Saten comes from the best vineyards with at least 25 years of age, located in high hill with east exposures. Chardonnay is manually harvested and taken to the cellar for pressing, the musts ferment for a 30% in white oak barrels and the rest in steel. In the spring following the harvest, the wine is blended and bottled with the addition of yeast and sugar to allow the second fermentation that takes place in the bottle so as to allow the development of bubbles (the pressure in the bottle is determined by the sugar qualtity added before bottling in this case for the Saten is lower than other types of Franciacorta), the aging period for Bellavista Saten is 5 years before disgorging and being released.”
