The nephew of famous natural winemaker Marcel Lapierre, Philippe Pacalet is a Burgundy vigneron who is committed to the same sustainable winemaking practices as his uncle. Philippe only works with grapes from selected vineyards that meet his specifics requirements and vinifies them at his own 19th century winemaking facility in the heart of Beaune. This is his 2022 Les Lavrottes, a small premier cru at the southern corner of Bonnes-Mares. A youthful but elegant red Burgundy, with very pleasant tannins and cleansing fruity acidity.
Philippe Pacalet 是已故自然派釀酒大師Marcel Lapierre的外甥，師承自然派葡萄酒宗師，2001年已本名成立酒廠的Philippe Pacalet 如今已成為勃根地最炙手可熱的「自然派葡萄酒」代表酒廠。Domaine Romanee-Conti曾經邀請Philippe Pacalet接任釀酒師，但是Phlippe卻辭退了眾人夢寐以求的機會，選擇獨自創業，希望透過自己的品牌貫徹釀酒理念。 Philippe Pacalet 創業前已有豐富的釀酒經驗，曾於Leroy學習釀酒，學成之後則來到DRC二當家的酒廠Prieure Roch 擔任釀酒師。目前酒廠的自有地僅有 Aligote，其餘均則由簽約的農家購買而來，依照 Philippe的規範嚴謹的栽培，Philippe精心挑選葡萄園位於遍布金丘大小產區 Gevrey-Chambertin, Chambolle-Musigny和Nuits Saint Georges、Pommard等，頂級葡萄酒則有 Charmes Chambertin、Echezeaux等數款。
